Yes. Aside from the obvious differences between candida, saccharomyces cerevisiae and bayanus.
Just in the cerevisiae family used mostly in brewing there are lots of differences in different strains.
The amount of esters (fruity flavours) they make, the heat tolerance (Coopers yeast surviving hot Adelaide temps), the alcohol tolerance (Champagne yeasts have to cope with more alcohol that beer yeast)
Some yeasts even try to kill other yeast strains and other organisms with there own excretions.
EC1118 is a very neutral (not many fruity flavours), heat tolerant, high alcohol tolerance (18%) killer yeast originally intended for making champagne.
